I Love broccoli and so do my kids (they call it eating trees LOL) but I have never tried the soup - since in normally comprises of lots of cheese and cream and therefore really not fix approved ;) But I adapted this recipe and it was amazing - I hope you all enjoy it as much as we did!
Ingredients

3 Tbsp butter or olive oil

1 onion chopped

2 cups of diced carrots

3 cloves of diced onions

1/4 cup of gluten free all purpose flour

3 cups of gluten free reduced salt chicken of vegetable broth

2 cups of unsweetened almone milk (or other type of milk)

4 cups of chopped broccoli (1 medium head)

1 tespoon of dijon mustard (optional)

salt and pepper to taste

2 cups of freshly grated sharp cheddar cheese
Directions
Heat Butter/oil in large saucepan, add onion and saute till clear. Add carrots and saute for 2 more minutes. Stir in garlic and saute for a minute, then stir in flour.
Whisk in the stock until evenly combined. Stir in milk, broccoli, mustard, salt and pepper.
Bring to near boil and then let simmer (stirring occasionally) for 6-8 mins (until broccoli is cooked).
Stir in the grated cheese until completely melted.
Note: don't use pregrated cheese as it doesn't melt as well
Serve immediately, and top with a little extra cheese, enjoy!
