You know when I saw these Pineapple Chicken Skewers in the fixate recipe book, I just knew I had to try them. I have always been a little scared to try skewers, not sure why because they were so easy to do, and quick!

 

Ingredients

  • 8 bamboo skewers

  • 1lb of raw chicken breast cut into 1 inch pieces

  • 1/4c reduced salt gluten free soy sauce

  • 2 tsp sesame oil

  • 2 tsp grated fresh ginger

  • 1 can of pineapple chunks drained

  • 1 medium red bell pepper cut into 1 inch chunks

  • ½ a large red onion cut into 1 inch chunks

 

Directions

  1. Soak the bamboo skewers in water whilst you prepare the chicken (or for 30 mins)

  2. Place chicken in a resealable plastic bag with soy sauce, oil, and ginger. Shake to coat chicken then leave in fridge (sealed) for 30 mins

  3. Preheat the BBQ (or grill) on medium heat

  4. Place a piece of chicken, pineapple, pepper and onion on skewer and repeat so each skewer has 2 of everything

  5. Grill on a covered grill for 4-5 mins on each side or until chicken is no longer pink on inside

  6. Enjoy!
