GRANOLA BARS
My kids LOVE having something sweet in their lunches, and I love having something I can quickly grab them for a snack on the way to gymnastics, swimming, soccer, ballet etc. So I always have some of these bars in the freezer – yes my kids will eat them straight out of the freezer (I may also have been known to do that ;) )
Ingredients

¼ cup of butter

¼ cup of honey

1/3 cup of brown sugar

1 ½ cups of gluten free oats

1 cup of rice cereal (e.g. rices)

½ a cup of uncooked quinoa

2 Tbsp of Chai seeds (optional)

½ cup of dried cranberries (optional)

½ tsp vanilla

semi sweet chocolate chips for the top
Directions
Mix together the dry ingredients in a bowl (oats, rice cereal, quinoa, Chai seeds and cranberries).
Bring the first 3 ingredients (butter, honey and brown sugar) to the boil in a small saucepan.
Once boiling turn heat down but continue to boil for 2 mins.
Bring off the heat, add the vanilla and stir.
Pour the liquid over the oats etc and mix then put in a greased pan (approx 3/4 inch thick - I use an epicure tray). Press the mixture down firmly then stick the chocolate chips on top.
Let set at room temperature then cut.
Personally (if I am not using my epicure tray) I put them in the fridge after they come to room temp to make more solid before cutting.
Store in an airtight container - I put mine in the freezer and take one out at a time for lunches etc
