
Shakeology Carrot Cake
There are times when you just feel like a treat and don't want to blow the diet. Like last night when the kids had ice-cream for dessert. This carrot cake did the trick - a little too well when you consider that my 2 year old went off and got herself a spoon so she could share with me!
Ingredients - Cake

2 egg whites (3 Tbsp from a carton)

1/4 cup of oats (gf certified if required)

1/2 scoop of vanilla shakeology

1/2 a banana
-
10 baby carrots
-
1 tsp cinnamon
-
1 tsp vanilla essence
-
1 Tbsp unsweetened almond milk or water

1/2 tsp baking powder

1 tsp stevia (optional)
Ingredients - Frosting

1/4 - 1/2 cup plain Greek Yogurt

1 tsp stevia
-
1/2 scoop vanilla shakeology (use less if using less Greek Yogurt or you could use none)
Directions

Blend or grate carrots

Put all cake ingredients in a blender and blend until smooth

Pour batter into a cup or small bowl (spray with non-stick oil if you want to transfer to a plate)

Microwave at 60% power for about 2 mins 30 seconds or until cake consistency

Make frosting whilst cooking by mixing all ingredients together

Spoon frosting over cake and enjoy!
